Hummus
Ingredients
- 2 cups (400g) chickpeas
- 2 cups (400g) cannellini beans
- 2 cloves garlic
- 1 Tbs (15ml) lemon juice
- 1/2 cup (125ml) olive oil
- Salt and pepper to taste
Combine and Puree
- Combine all ingredients, excluding olive oil.
- Pulse in food processor or blender 3-5 times.
- Turn blender or processor on low and begin to drizzle olive oil into opening.
- Gradually increase speed while continuing to drizzle olive oil.
- Once smooth and creamy, reduce speed, add salt and pepper to taste.
Garnish and Serve
- Pour into serving bowl.
- Garnish with olives, oregano, pine nuts to your liking
- Drizzle 1 Tbs (15ml) Greek olive oil
- Serve with fresh vegetables, pita, olives, cheese....
