Saláta Orzo

Orzo Salad

Ingredients

  • 1 1/4 cups (250g) dry orzo

  • 8 ounces (225g) whole feta, sliced in 1/4 inch slices
  • 1 medium cucumber, peeled, seeded, halved lengthwise and cut in 1/4 slices
  • 10 ounces (275g) grape tomatoes, halved
  • 1/2 cup (100g) sliced kalamata olives or 3/4 cup sliced black olives
  • 1/2 cup (100g) chopped red onion , rinsed under water to removed harsh bite
  • 2 Tbs (3g) chopped fresh oregano
  • 2 Tbs (3g) chopped fresh parsley

Dressing

  • 1/4 (60ml) cup olive oil
  • 2 Tbs (30ml) fresh lemon juice
  • 1 Tbs (15ml) red wine vinegar
  • 1 clove garlic , minced
  • Salt and freshly ground black pepper

Serves 4-6 

 

Step 1 - Prepare the Dressing

  • Combine all ingredients in bowl or jar, except oil.

  • Mix ingredients with whisk in bowl, or shake in jar.

  • Add oil and mix or shake thoroughly.

  • Set aside in refrigerator. 

Step 2 - Prepare the Orzo

  • In stock pot, bring 2-3 quarts (2-3 liters) salted water to a boil,
  • Add orzo, initially stirring to keep from sticking together,
  • Boil for 8-10 minutes, stirring occasionally,
  • Drain in colander, drizzle with olive oil to prevent sticking,
  • Set aside in refrigerator. 

Step 3 - Combine and Serve

  • Place all vegetables, olives and orzo in large bowl and toss to combine
  • Add herbs and toss again
  • Add dressing and mix gently
  • Place onto serving platter and top with feta

Serve!
