Sweet Potatoes

Ingredients

  • 2 Large sweet potatoes, peeled and cut into 1/2 inch (1cm)

  • 1/4 cup (50g) brown sugar

  • 1/4 cup (50ml) water

  • 3 almonds, minced

  • 1 Tbs (15g) black sesame seeds

  • Pinch of salt

 

Step 1 - Preparing the Sweet Potatoes

  • Preheat the oven to 400F (205C) degrees.

  • Soak cut potatoes in water for 20 minutes to remove starch.

  • Drain and arrange on parchment lined baking tray.

  • Bake for 10-15 minutes until soft.

  • Simmer sugar and water in a small saucepan until thickened.

  • Remove from heat and add almonds.

  • Fry sweet potatoes in vegetable oil at 350F (175C) degrees until golden.

  • Remove from oil and lay on paper lining to absorb oil.

  • Arrange on serving platter and drizzle with the almond syrup.

  • Garnish with sesame seeds and salt.
