Psitá Sountzoukákia

Grilled Skewered Meatballs

Ingredients

  • 1 lb (450g) ground beef
  • 1 cup (150g) chopped onion
  • 2 med. garlic cloves
  • 1/3 cup (125g) chopped fresh parsley
  • ½ tsp (2g) ground cumin
  • ½ tsp (2g) dried Greek oregano
  • Salt and Pepper to taste

Serves 2-4

Step 1 - Mix the Meat

  • Mix the onion, parsley, garlic, herbs and salt/pepper in food processor.
  • Combine the meat and ingredients from food processor and mix thoroughly.
  • Refrigerate the mixture for 1-2 hours.

Step 2 - Form the Skewers

  • Divide mixture into 3 oz (90g) portions.
  • Flatten the portions into a rectangle.
  • lay a skewer in the middle of the flattened portion.
  • Wrap the meat around the skewer into a large "cigar" shape.
  • Press firmly around the skewer.

Step 3 - Grill the Meat.

  • Heat a charcoal or gas grill to medium high.

  • Grill for about 5 minutes, then turn over for 3-4 minutes.

  • Serve with toasted pita bread and tzatziki sauce.
